When I’m taking a break from my sourdough baking I always choose Almond flour as my substitute. Almond flour is made from finely milled almonds (usually blanched almonds) and they a bring an enormous nutritional value to the table that regular wheat flour just can’t match. For many people who have gluten sensitivities or celiac disease, almond flour is a great alternative choice to traditional wheat flour. Because it’s made from almonds it’s naturally gluten free, making it perfect for those who need to avoid gluten in all forms, while still enjoying their favorite foods.

Almond flour is a powerhouse of nutrients. Almond flour has a rich source of vitamin E, which is a potent antioxidant which is great for the immune system and skin health. Tips
- Adjust the heat to the proper setting for your personal stovetop. Whatever medium-low is for your stove top adjust it to that.
- Gluten-free pancakes can burn very fast so ensure your heat isn’t too high. adjust the heat as you cook.
- You can tell if your heat is too high if your butter starts burning in the pan, this means it’s time to turn down your heat.
- Use a hand blender for even quicker prep time to make the batter.
- Tapioca flour be swapped out for potato starch or arrowroot powder.
- For a vegan option instead of eggs,butter and milk use: almond milk,flax egg and avocado oil.
What You’ll Need
- Almond Flour: I buy fine or super fine blanched almond flour.
- Coconut Flour: I choose Viva Naturals Coconut flour it’s the finest milled coconut I’ve ever had
- Eggs: Be sure to use good quality eggs, I used pastured raised eggs
- Tapioca Starch: use finely milled tapioca starch for the best results.
- Vanilla Extract: Very important don’t skip this item.
- Organic Coconut Sugar: Use any low glycemic sugar replacement with a 1:1 ratio.
- Baking Powder: very important Needed for rising.
- Himalayan Salt: I use Himalayan pink salt for everything.
- A2 Full Milk: Swap out for plant-based milk using the same ratio if needed.
- Melted Grass-fed Butter: Use a high quality butter, preferably grass fed butter
- Water: I always use unfiltered water but any clean water on hand is fine.
- Baking Soda: This is needed to give that familiar pancake texture, make sure your baking soda is food grade.

- Ladle
- Waffle Maker
- Large Mixing Bowl
- Measuring Cup

How To Make Almond Flour Waffles
Add all dry ingredients to a large bowl, then mix well, next add all the wet ingredients and stir in till fully incorporated.
Warm up your waffle maker, then scoop two portions of your batter with the ladle and pour over the hot waffle machine. Close and cook for 6-7 minutes.
Repeat the last step till you have no more batter left. serve up with butter and maple!

- ½ cups Coconut Flour
- ½ cups Tapioca Flour
- 2 tbsp Baking Powder
- ¾ tsp Baking Soda
- 2 tsp Himaylayan Salt
- 1 tbsp Vanilla Extract
- 3 cups A2 Full Fat Milk
- 3 cups Water
- 4 whole Pasture Raised Eggs
- 1 cup Melted Grass-fed Butter
- ½ cup Coconut Sugar
Instructions

Notes
Tips:
- Certain waffle makers often cause waffles to stick to the waffle mold. Spraying the waffle iron before adding the batter helps the waffle slip off the iron mold better, when time to remove it.
- To add toppings pour one scoop of batter onto the waffle iron. Then place blueberries, chocolate chips or bananas. Next scoop more batter and layer it on top and close the waffle iron.
- you can swap out the melted butter for melted refined coconut oil. Use refined because it will not turn solid when cold ingredients touch it.
